Brian McCarthy’s journey with Cork Rooftop Farm is one of innovation, resilience, and vision. What began as a COVID-19 lockdown project on the roof of a 6,000-square-foot city warehouse has since grown into a 60-acre organic farm on the outskirts of Cork.
